Storage: Keep in a cool, dry place for optimal product preservation. Once opened, keep refrigerated between 5º and 8º C.
We prepare the fruit by peeling it and removing the seeds by hand, as this is the only method that preserves its natural flavor and texture. Next, we macerate the tomatoes with lemon juice and sugar until they are ready to be cooked. We simmer the mixture in small batches (about 120 jars per cooking) to ensure the perfect consistency for every lot of fruit. Once cooked, we jar it immediately and use the ‘Bain-Marie’ technique to guarantee its preservation. This tomato jam has a very smooth texture, making it ideal for culinary use.
