PREPARATION +

Our Neus oil starts at the source: we carefully monitor the entire process, from the first blossoms to the optimal ripening stage, to harvest our olives at their very best.

In November, we begin harvesting the olives at their peak of ripeness. They are cold-pressed the very same night they are picked. We store Neus oil in a dark, sealed underground vat at a steady temperature of approximately 15ºC; this allows for natural decanting, removing impurities and preventing the oil from becoming rancid.

After a couple of months, the oil is bottled on demand throughout the year to ensure it is served in peak condition.
