“Angel Hair” Cakes

A special dessert that will sweeten your day!

INGREDIENTS

FOR THE DOUGH:
300 ml of Extra Virgin olive oil “Neus”
100 ml of muscatel 100 ml sweet anise
The zest of a lemon
650 g of pastry flour
FOR THE FILLING:
500 g of pumpkin threads
FOR THE TOPPING:
100g sugar
5g of cinnamon powder (one teaspoon)

PREPARATION

1- First, we mix all the liquid ingredients, and add the lemon zest and the flour. Knead until all the ingredients are well integrated.
2- Make balls of about 40 g, place them between two thin sheets of baking paper and stretch them with a rolling pin. We make circles of dough with the help of a circular mold.
3- We fill the cupcakes with pumpkin threads and close them with the wanted shape.
4- Place them on an oven tray prepared with parchment paper and bake for 15 or 20 minutes, with the oven preheated to 180º, with heat up and down.
5- Remove the cupcakes from the oven and add a topping with sugar and cinnamon before they cool.
