La elaboración de nuestro aceite Priorat Natur empieza en el árbol, donde se controla desde la floración hasta el momento óptimo de maduración para cosechar las aceitunas.
En el mes de noviembre es cuando empezamos a cosechar, teniendo siempre en cuenta el punto de maduración.
Las prensamos en frío la noche del mismo día que las hemos recogido. Guardamos el aceite Neus en un tinillo oscuro, cerrado y a una temperatura aproximada de 15º para conseguir una buena decantación que elimine las máximas impurezas posibles y evitar que se enrancie.
Después de un par de meses, lo vamos envasando según la demanda, para servir-lo durante todo el año en óptimas condiciones.
