Extra virgin olive oil
Cheese (to taste)
1- We choose some good quality eggplants.
2- Cut them in half lengthwise and mark them with the knife on the inside, season with salt and pepper and add a splash of oil.
3- Preheat the oven to 220ºC. Place the eggplants on the tray with baking paper and cook them until they are ready.
4- We take them out of the oven and cover them with cheese and a spoon of Roasted Pepper Jam on top.
5- Finally, we put them back in the oven until the cheese melts slightly.
6- Our recipe is ready. We take the eggplants out of the oven and decorate them with a crispy topping of spring onion and parsley.
