The production of our Priorat Natur Extra Virgin Olive Oil begins on the tree, where we monitor it from flowering to the optimal ripening stage for harvesting the olives.
During November, we begin harvesting the olives according to their ripeness. They are cold-pressed on the night of the same day they are picked. We store the Neus oil in a dark press, sealed, at an approximate temperature of 15 °C to ensure proper settling, remove as many impurities as possible, and prevent it from turning rancid.
After a couple of months, we bottle it according to demand, ensuring it can be served throughout the year in optimal conditions.
