Calçots with Tempura

Easy, simple and very original recipe to enjoy the calçots season at home!



- 130g of flour

- 70g of cornstarch

- 2 tablespoons salt

- 1/3 tablespoon of yeast

- 1 egg yolk

- 200ml of cold water

- 1 tablespoon sesame seeds



1. Clean the calçots and extract the leaves.

2. Put them in a bowl and pour a drizzle of extra virgin olive oil and season to taste.

3. In another bowl, mix the egg yolk and cold water with a few sticks without beating.

4. Stir in the sesame seeds and sift the remaining ingredients.

5. Mix the ingredients so that they are well integrated but without beating them.

6. Coat the calçots with the mixture previously made.

7. Fry the calçots in 600 ml of oil at 180º until well browned.


Done! Enjoy some calçots with tempura dipped in our delicious romesco sauce!
