Artichoke flowers

INGREDIENTS

1 kg

1 l water

1/3 teaspoon salt

1 lemon

Coarse salt

Extra virgin olive oil

Fresh parsley

Allioli


DIRECTIONS

Clean artichokes: get rid of outside leaves until you get to yellowish part, cut ends, cut some of its tail, and peel lightly. Whenever an artichoke is clean, put in a casserole filled with 1 l water, a bit of fresh parsley, the lemon cut into dice, and some of its juice, this way we’ll avoid oxidation.

Boil artichokes with lemon and salt for 15 minutes at medium heat. Once boiled, drain them.

Put the artichokes looking up on an oven tray with parchment paper and open carefully until you get a flower shape, add some extra virgin olive oil and some fresh basil. Put in oven for 10 minutes at 180º at half height.

Remove from oven and add coarse salt, a drizzle of extra virgin olive oil and serve with allioli.
