Orange sponge cake


1 yogurt

375 g rice flour

240 g sugar

100 cl extra virgin olive oil

3 large eggs

Orange juice and zest

Pinch of salt

Baking powder

Chocolate chips



In a big bowl put the egg whites with a pinch of salt, whisk.

Add, and whisk after each ingredient, the sugar, rice flour with the baking powder, yogurt, olive oil and yolks and, lastly, add the orange juice and zest and the chocolate chips.

Once the mixture is homogeneous, put in mold and in oven during 35 minutes, with the heat on the lowest level at 180º. While it cooks, turn on the oven fan for 5 minutes.

Take the sponge cake out of the oven and sprinkle some powdered sugar and some dried orange slices.
